Fort Defiance is located in Red Hook, and although it can be quite the trip to get out there, it’s worth it for the brunch. The quaint little restaurant sits on the corner of Van Brunt and Dikeman streets. My friend Maya and I ordered the Biscuit Egg Sandwich, which consists of a cheddar biscuit with ham, jalapeno jam, and an egg. The biscuits were perfect! We also ordered a side of the most delicious collard greens were sweetened with caramelized onions, and elevated with a hint of lemon zest and coriander. To accompany our southern brunch we ordered the Creole red beans that were creamy with bits of andouille sausage mixed in. At the end of our meal, we walked back to Cobble Hill with full bellies and big smiles.
